This is the reason why I cannot go all Vegetarian. These pigs are so fingerlickin’ good. Yes, I know how they are prepared for our consumption. I watched it and just recently read about it. I am sorry… if you were not so yummylicious I would pass. Chef Anthony Bourdain actually declared us (the Philippines) as having the best pigs in the world. No wonder I am addicted. I have sinned and I confessed but will not repent for the sordid love affair with the pork.
The dish we had is called “Liempo” (grilled pork belly). The Mister lovingly marinated it overnight in soy sauce, vinegar, and crushed garlic. The grill was then fired up and while the belly was cooking the Mister used the marinade as well to baste the meat.
Serve immediately with white rice! You can also dip it in vinegar with chillies to amp it up.
